Why not an Indian food chain?

In corporate America, we have chains for every retails sector and food is not an exception. There are Italian (Olive Garden, Buca di beppo), Chinese (P. F. Chang), Mexican (Taco Bell, Chipotle and … ) and other American fast food stuff (and possibly junk) like Mac D, KFC, Burger King, Wendy, Arby and tons of other. The fact, which surprises me, is that there is no Indian food chain. Indian food is quite famous among the western world and especially in United States. Whenever I go to some good Indian restaurant, I see more people of non-Indian origin than Indians itself (based on the experiences at SFO, CA, Mountain View, CA, Palo Alto, CA and Cincinnati, OH). So why have not any entrepreneur thought of an Indian food chain endeavor? I disagree to the argument that there is a limited market or a narrow business opportunity in starting a Indian food restaurant. According to me if done in a cost effective way, standardized, cuisine adjusted to the western palate and with proper marketing effort, Indian food chain should be an excellent business opportunity, which for some unknown reason is still unexplored. Any thoughts?

Great thought, i have been also thinking down the same lines. I feel indian restaurant is no diffrent from any other restaurants. all you need is a good presentation , location and customer service along with a decent food. i am intrested in opening a reataurant pretty soon, and my long term goals are to make it a franchise for every one to profit from. i agree 100% that we have a gold mine for indian restaurant franchise or chain in usa.

I will give you the reason why there is no Indian restaurant chain although the market is HUGE & untaped.
---> Restaurant is a labor intensive business and you can not find cheap labor anymore. For Italian, Greek and Chinese chains they sponsor workers and gourmet chefs from those countries who come here on visa. Try to sponsor some workers to get visa to work in Indian restaurants! They even hesitate to give you visa if you have a PhD!
---> You can not have a bar. Period! If you do not have a decent family environment even American customers will not come to you twice. So 30% of income that you could be producing, which is less labor intensive, is not accessible to you at all.

Hi Amit,

It is the same in the UK, although Indian Food Chicken Tikka Masala is now recognised as the national dish, there are no national chains. Here are my views on why there are no franchised indian restaurants in the UK or the US, (although there are some companies from Mumbai that are getting there act together - pulseindia and tiffinbites, as well as masala bowl in the
US).

From an operational point of view:

There has to be standardisation of the food with an exact science behind the reciepes.

This, in turn, will reduce the requirement for skilled labour, (Chefs, which is the main barrier and the main complaint of restaurantuers).

There has to be considerable investment in training, health and safety and proper transportation of goods to outlets.

Good stock control in place to reduce wastage and ensure profitability.

This is just a few thoughts that I have had on the subject and would be interested in hearing some more from others out there - Dean Menzies

It's a good concept. For one thing you could sell grilled chicken like El Pollo Loco, but much better sides (naan instead of tortillas, chutneys and achars instead of salsa, dal instead of frijoles, tarkari). Also sweets, and to drink (masala) chai etc.

South Indian snacks could be another winner.

Why not try this out of a food truck? You save on rent and not being tied to a fixed location would let you try selling to different demographics.

As u mentioned marketing and sales is your area of expertise. On the other hand I am more into cooking Indian dishes. Cooking is my passion. I don't have any such professional training but can cook pretty darn good (trying not to brag too much).I do have a concept in my head as well but I think opening an indian chain would require quite a bit of investment. But u are right if it takes off then sky is the limit. Which area are u thinking to start the rest in?

Hey Amit,
There is no doubt if there was a indian qsr or fast food chain it would do great. The question is who is willing to come up with the funds for the venture. I might be stating a few obvious points here. Look at all the chains who were started by individuals mickey d's , wendy's, moes etc. They really never thought of them to be the size they are today. There are a good bit of indian restraunts - dine in or take out only ( zyka-atlanta, inchinbamboo gardens - atlanta) that have opened up multiple locations under the franchising concept. But they run out of steam or hit a wall after they get to a handful of units. As far as a indian restaurant / qsr in india going global well indian businessmen are very gun shy when it comes to thinking out of the box. the fmcg sector is not like the IT sector. Its takes a lot to grow and have that vision. I owned 3 quizno's at a point and had worked at indian restraunts during my college days in the carolinas. food industry is very taxing. you need a concept, idea, vision, funds, drive etc. all this should be able to be implementable practically. Even the big players in indian f & b see a value in a fast food chain. Why wouldn't a rajbhog, kwality ice cream or someone venture into it? look at the likes of kfc, pizza hut and taco bell all owned by pepsi foods. pespi wanted to get their hands and feet in all known food areas. in a nutshell an individual doesnt have the funding power and idea, concept, indian food knowledge all in one and nor do the big players want to diversify their portfolio. they dont see the cost benefit in become the size of a mickey d's i guess. They are content doing their bread and butter business. I have spoken to indian fast food entrepreneurs locally in india and directors of prominent food companies. these chains will open up in india as the risk is way lesser. food business is tough. picture this invest 500k open up a couple places in a good city aka chicago, la, atlanta, and work 15 plus hours a day. its mentally and physically taxing. there is a lot more i can add here. but it was a pipe dream of mine as well. look how well britian has accepted indian food. so why not a indian food chain in america. its a tough one. its not only the product there is a lot more to this. i get the whole pf changs , olive gardens etc . but they probably had a bank before they ventured in.

I'm an Indian restaurant owner(past 5 years) with 15 years in IT industry(Just got tired of sitting infront of the computer and lying that it will take me 5 days to finsih 5 minutes worth of work.."JOB SECUIRITY".
I have been toying with this idea of Indian Food Franchise for past 3 years and now opening our second location based on a Franchise Model. Let me tell you it is neither easy nor FUN to RUN a Full Fledged Indian restaurant. There have been so many days that I had to dishes (wash) for 300 patrons visting the restaurant but learnt a lot from that as well "NO Complaints".

Only thing that stops us from having a franchise is LACK OF PROCESSES and unwillingness on part of people who don't understand the food.

You are married to your business and it is not easy to keep both the wives happy if you are married to another one at the same time.

There is a huge shortage of legal skilled manpower (Indian cooking savy) in this country and that just adds to the misery of a restaurant operator.

I have seen and met people bursting with enthusiasm for year opening an Indian Restauarnt and after working in kitchen for a week it just seems to fade away in matter of hours (HARD WORK AND NO TIME FOD KIDS and WIFE and forgets those 5 week trips to India on Diwali Sorry I forgot to mention Medical Insurance and 401K too ).

I can go on for hours writing about this whole predicment but ain't going to help much.

THERE IS STILL HOPE AND HUGE POTENTIAL FOR INDIAN FOOD AND WE NEED SOME OF US STEPUP AND JUST TAKE CHANCES. PEOPLE HAVE JUST STARTED TO LIKE INDIAN FOOD. IT IS JUST THE BEGINNING. WE HAVE TO EDUCATE PEOPLE THAT SPICY DOES NOT MEAN HOT. WE HAVE TO MAKE THEM UNDERSTAND FOOD AND ITS HEALTH BENEFITS AND KEEP IT AS AUTHETNIC AS WE CAN.

PEOPLE ARE TIRED OF CHINESE FOOD AND NOT VERY MANY TAKERS OF INDO CHINESE EITHER. WE HAVE TO GO FOR MASSES

GIVE SOME AUTHENTICITY TO FOOD

SORRY FOR KEEPING IT SO LONG...

I agree with you, and also with Dev Prakash.
I got two non franchised successful locations where we sell American breakfast, Lunch and dinner.
Being individual (non-franchise) food chain we face lot of competition among big boys like Mc's, Bo jangles, KFC and my next door big giant Chick-fil-a.
We tried lot offer and market best Indian food menu at our place, it did work well for a while but when people have choice to spend $5-10 for their meal they go more fried chicken than Tandoori. And I will do same if I have choice between pav vada and burger I will pick pav vada my first choice.
My experience and finding about adding or open Indian food chain:
- We are entrepreneur with a short term marketing mentality cannot vision for long term market (for generations).
-More family oriented than any other community.
-Bottom Line is more important than Quality, Name and product you offer.

I see a lot of passion, good ideas and good enough knowledge to at least cover some common pitfalls of opening Indian rest chain.
Here is what I am proposing and please jump in/criticize/correct/ improve upon the proposal.

I want anyone posting on this blog to identify them as one/many of people below. We might think we are insignificant by ourselves but we are surely strong together.

Investor: passion for Indian food and new ideas and ready to invest (in a good profitable business plan of course).

Sales or Marketing or Business strategy: someone who can do market research and help us with location, interior rest theme and current trends, standardize menu and so forth.

Operations: someone who can do kitchen layout, logistics and/or even wants to run this place

Product knowledge: people who love cooking and want to experiment with new dishes and menu

Consultant: People who already have/had real life experiences in this area and would love to be part of this idea and make some money on the way

I will compile the list and publish it here and do the follow ups. We all have jobs and don’t think it will be practical to leave our jobs and jump into this. But at the same time we all can do our due diligence for something we are passionate about and be paid for it along the way on hourly basis to start with and the same will also be basis of % partnership in business.
The eventual mission statement is to have very friendly interior rest and dishes which are healthy and can be prepared by anyone.

Hi, I have worked for a few years as a consultant for restaurants in India. And I'm moving BACK to states in summer of '13. Be glad to help anyone interested in this field.

Now regarding why no great franchises for Indian food... If you look in India where there are lots of skilled cooks available, they still don't have many franshisable restaurants/qsrs.... So cooks are not it.

Neither is the bastardization of cuisine for failure... Cos taco bell is hugely successful and trust me it is not Mexican nor Tex mex or cal mex.

One reason I found in my experience is that very few Indian entrepreneurs look at franchising with clear eyes... I mean consider all the costs and time and effort involved in such endeavor... Like the gentleman who thinks he can start a takeaway outlet for 5000 usd.... Getting ready for franchising is heavy duty investment in time money and effort. The main reason for failure for places like chutneyjoes and their ilk is they start franchising waay before they are ready.

Now ideal way to go about this is:
1. Start with concept: concept is not Indian restaurant. Not just. Ex: pf Chang is way more than a Chinese restaurant.
2. Based on concept, creat a simple menu with styling and ambience/style points, service levels.... Then test it on people you know... Not once, multiple times on the same people... Cos first few times, novelty trumps.
3. Make necessary changes, start one outlet
4. Test test test.... Become a detail person.... Anal retentive detail person really
5. Once your image/lifestyle message, food, price, unique value are accepted by market, work on process process process
6. Once you reach a point where you can only spend 2 hrs a day managing the outlet, start one more
7. Again fine tune your process, with the main intent of automating all decision making or most anyway
8. Once that works a little... Go for 2 more outlets in same city, preferably
9. Once that works, open 2 locations in a different city...
10. Once that works, start thinking of franchising

Like I said, lots of effort with many many many failure points....

Simple truth as Anonymous mentioned above - very valid points. It has to conceptualized, start small, time tested and then floated. Most of desis fail to realize that and thats why failure, but # Tamarind Kitchen # looks awesome...keep going!

Look at the fast food sector and chain restaurants in US...all of them have a concept - a concept of easy handling, mass appealing and clean process with an atmosphere that will cater to cross section of demography. Most of the start-ups fail to recognize this and try to slam down the customer with their "inventions"....add to this the lack of testing as mentioned above, grand first entrance (premature), lack of interest to work hard and incorporate changes, etc. fuel the catastrophe quickly...another major issue with desis are plagiarism...blunt copying of other concepts, which always hits back fast. The most important thing is to create a concept that encompasses easy handling, fresh mass appealing products. Tacos and Stir fries took a long time to get woven in to the American cuisine landscape, is time tested and has its own reason for its mass appeal with the constituents of those demographics presence long dates in American diaspora. It will take a long time for biriyani, pav bhaji and ladoo to be a household name here...any venture with closeness to Indian savory has been successfully conceptualized and marketed by Chipotle already even though it proclaims to be a mexican grill....doesn't mean that we will fail to see such a successful venture in the long run, I am very optimistic about the Indian ingenuity.

Indian restaurant run like any other American then you can select menu which is not overly authentic, what ethnic rest. Lack is food consistency because very seldom owner is a cook, they find some cheap Indian labor who can boil egg and make them chef,

Some of these can be prepared on the spot, quickly, fresh, hot and delish.

The essence of an Indian Reasturant is the fresh food... prepared from fresh ingridients... obviously a fast food chain cannot do that... if you are talking about Indian fast food chain it's a implementable concept... however apart from few (read vada pav, dabeli etc) Indian fast foods are hard to pack and be presentable... unless you create a fusion of a sort...
